Bananas Lickety-Split

The kids thought I had been kidnapped by aliens or something because their "normal" mom does NOT prepare dessert for any old meal.  Ever.  Imagine their delight when they saw me whipping up something that looked tasty and unhealthy on a weeknight!  Wahoo, I still have a fun bone in my body!  This little treat is so easy to throw together aaand I had the help of a certain 7 year old that was actually help and not hinderance!  Surprises abound!

I took cinnamon sugar tortillas, cut them in circles, and stuffed them in muffin tins.  I sprinkled a bit of cinnamon sugar in them before I threw them into the oven for about 7 minutes -- until they got a bit crispy.
 I then carmelized two bananas.  I used butter (these days I refuse to use any butter substitute) to fry the bananas which I rolled in organic cane sugar.  About 4 minutes on each side to get them golden brown.  No one wants to eat soggy mashed bananas!

 Then after putting the bananas into the cups I drizzled caramel sauce over it all...
...and added a dollop of homemade whipped cream.  No cool whip here!  Simple heavy whipping cream beat with cane sugar and a touch of vanilla.
Ta-da!  I had two very willing kids eating their full portion Shephard's Pie lickety-split to get to their treat...which can be fairly tricky with that seven year old I mentioned earlier!
